Ingredients for 2 servings:

  • 200 g pasta (spaghetti or rigatoni)
  • 100 g pancetta or smoked bacon
  • 2 egg yolks
  • 40 g grated parmesan
  • Salt, freshly ground black pepper

Method of preparation:

  1. Cook pasta al dente according to directions.
  2. In a pan, fry the pancetta until crispy.
  3. In a bowl, mix the egg yolks with the parmesan and a little pepper.

  • 3-4 large ripe tomatoes (or a can of diced tomatoes)
  • 2 cloves of garlic
  • Fresh basil leaves
  • 2 tablespoons olive oil
  • Salt, pepper

Method of preparation:

  1. Cook the pasta according to the instructions.
  2. Sauté the chopped garlic in olive oil, then add the tomatoes and let them simmer for 10-15 minutes.

  • 200 g tagliatelle or penne

Useful tips for cooking the perfect pasta ️

  1. Use enough water: For every 100 g of pasta, at least 1 liter of water is recommended. Thus, the pasta will not stick together.
  2. Salt added at the right time: Salt is added after the water boils, not before. A good rule of thumb is 1 teaspoon of salt for every liter of water.
  3. Do not rinse the pasta after cooking (except those for salads): The starch that remains on them helps the sauce adhere better.
  4. Save some pasta water: You can add it to the sauce to make it more creamy and bound.
  5. Al dente is the key: Cook the pasta 1 minute less than the time indicated on the package for a perfect result.
